Fondant Potatoes

A delicious alternative to roast potatoes
Ingredients
900g Potatoes for Roasting, peeled
250ml vegetable stock
25g butter, melted
Salt and freshly ground black pepper
Serves 4
Method
Preheat the oven to 190*C/375*F/Gas Mark 5
Cut the peeled Potatoes for Roasting into even sized pieces and trim them slightly to form an even barrel shape.
Place the potatoes onto a greased baking tray, half cover with the vegetable stock and brush over the melted butter.
Place in the oven for 40-50 minutes, occasionally brushing each potato with melted butter.
When cooked, the potatoes should be brown on top and white underneath and all the stock evaporated or absorbed by the potatoes.
