Colcannon

An Irish favourite
Ingredients
500g Potatoes for Roasting, peeled and cubed
250g cabbage, shredded
2 tbsp cream
Salt and freshly ground black pepper
Serves 2-4
Method
Place Potatoes for Roasting in a pan of lightly salted water and bring to the boil. Simmer for 15-20 minutes until the potatoes are tender. Drain thoroughly
Whilst the potatoes are cooking, lightly steam the cabbage.
Once cooked, sieve or mash the potatoes and mix with the cabbage and cream. Season well and serve.
