Quick spicy beef and potato soup
A tasty, warming soup! Serves 6-8
500g minced beef beef
250g cubed peeled potatoes (1/2-in cubes)
1 small onion, chopped
3 cans tomato sauce or passata
Ĺ litre water
1 beef stock cube
1/2 to 1 teaspoon hot pepper sauce
In a large saucepan or stock pot, brown ground beef over medium heat until no longer pink; drain. Add the potatoes, onion and tomato sauce. Stir in the water stock cube, salt, pepper and hot pepper sauce; bring to a boil. Reduce heat and simmer for 1 hour or until the potatoes are tender and the soup has thickened.
You can use chilli powder instead of pepper sauce if you donít have any to hand!
