These potatoes produce the perfect roast potatoes every time with that delicate blend of golden crunch and creaminess. Have you been disappointed with soggy, darker, brown-coloured roast potatoes in the past? This is because the amount of water in a potato affects its texture when cooked – too much water will produce soggy roast potatoes. Most potatoes have also been stored to maintain their looks but this method of storage turns the starch in the potato to sugar, producing darker, brown-coloured roast potatoes when cooked.

To guarantee you golden, crispy roasted potatoes with a fluffy centre we not only select those potatoes with the optimum water content, we also store them at a higher temperature. Their skins may not look the best but you won‘t be disappointed with the results – trust us.
Before roasting season the par-boiled potatoes with garlic salt and fresh rosemary
Or add Spanish paprika and flat leaf parsley to the potatoes 10 minutes before the end of roasting.
Cooking instructions for perfect results
Preheat the oven to 200°C/400°F/Gas Mark 6
Peel the potatoes and cut each one into even sized pieces.
Place the potatoes in a pan and cover with cold water and gently bring to the boil. Turn the heat down and simmer for 10-12 minutes. Meanwhile heat 50g of lard/dripping for each 1kg potatoes in a baking tray in the oven.
Drain the potatoes thoroughly in a colander.
Return the potatoes to the pan and shake the pan vigorously so that the potatoes become fluffy.
Add the potatoes to the baking tray ensuring the fat is very hot .Turning the potatoes so that they are evenly coated in oil.
Roast for 30 minutes.
Turn the potatoes again and return to the oven for 20 minutes or until crispy and golden.

The best storage temperature for Potatoes for Roasting is between 8-10°C. If the temperature is lower or higher than this, the colour and sweetness of the roast potatoes when cooked will be affected. Keep your bags of Potatoes for Roasting away from cold floors and store on pallets or racking to ensure a flow of air around them. This will decrease the level of storage damage.
